Language (10 hours weekly)
The lessons will introduce you to different aspects of the history of Italian cuisine and teach you the vocabulary by reading specific texts and recipes for famous dishes, as well as viewing videos and excerpts from relevant programmes.
Workshop (10 hours weekly)
The teacher will take you to see the gastronomic markets in the centre of Bologna and will advise you about any products you might be interested in or wish to purchase.
You may also choose to visit one of the following together:
- an acetaia - traditional balsamic vinegar works of Modena
- a firm producing Parmesan cheese or ham
- an oil-mill for the production of Brisighella oil
- a piadineria where you can watch a piadina (kind of flat-bread) being made and try one
- a winery in the Bolognese hills
- an enoteca (specialized wine-shop) where you can taste typical local wines.

Extras
In the afternoons, you can also take part in a cookery course held in a centro di cultura gastronomica: each lesson will end in a meal, and you will be able to taste what you and the other students have cooked under the guidance of an expert chef, accompanied by choice wines.
You will be given a list of locations in the area, significant from the enological and gastronomical point of view, and one of the best trattorie in town, where you can eat out and try some of the most typical dishes of the famous Bolognese cuisine.
