ITALIAN IN THE KITCHEN

Language (10 hours weekly)

The lessons will introduce you to different aspects of the history of Italian cuisine and teach you the vocabulary by reading specific texts and recipes for famous dishes, as well as viewing videos and excerpts from relevant programmes.


Workshop (10 hours weekly)

The teacher will accompany you on a visit to the food markets in the center of Bologna and will help you look for products that you are interested in or wish to buy.

On request and at an additional charge the student can take part in the following activities:

- visit with the teacher to a traditional baker’s including the chance to sample some typical local products (additional charge Euro 70 );

- visit with the teacher to a piadineria, where you can watch the piadina being made and taste this specialty from Romagna (additional charge Euro 70 );

- visit with the teacher to an enoteca with the chance to sample some typical local wines (additional charge Euro 65,00 + cost of tasting);

- visit to a farm that produces ham or parmesan cheese (additional charge Euro 130,00 + any travel expenses);

- visit with the teacher to a company that produces Modena balsamic vinegar (additional charge Euro 120 );

- visit with teacher to an olive-oil factory that produces Brisighella oil (additional cost Euro 180 );

Example of cooking course:

- Monday (theory in class)
Introduction to Italian cooking, reading texts about Italian food culture and studying some of the most famous Italian recipes.

- Tuesday (cooking practice - Lesson 1: risotto)
Visit to the food markets in the town center and purchase of the ingredients for the recipe of the day. Preparing the risotto under the guidance and supervision of the teacher followed by lunch in a pleasant and relaxed Italian atmosphere.

- Wednesday (theory and practice "through the pathways of taste")
from 9.00 to 11.00: watch videos and films about the preparation of the famous "fresh egg pasta" from Emilia; from 11.00 to 13.00: visit with teacher to the traditional and renowned pasta workshops in "gastronomic" Bologna. Lunch with teacher in one of the typical "taste venues" in our beautiful city.

- Thursday (cooking practice – Lesson 2: durum wheat pasta)
Visit to the local food markets and purchase of ingredients for the recipe of the day. Preparation of the pasta - strictly "al dente" – with a typical Italian sauce under the guidance and supervision of the teacher, followed by lunch in the most classic Italian tradition.

- Friday (cooking practice – lesson 3: fresh egg pasta)
Preparation of fresh egg pasta in the Emilia tradition at a center for gastronomic culture under the guidance and supervision of an authentic "pasta-maker". The lesson will end with the sampling – together with the teacher – of the fresh pasta made by the student as well as of some of the most famous culinary products from Bologna.

Extras

In the afternoons, you can also take part in a cookery course held in a centro di cultura gastronomica: each lesson will end in a meal, and you will be able to taste what you and the other students have cooked under the guidance of an expert chef, accompanied by choice wines.

You will be given a list of locations in the area, significant from the enological and gastronomical point of view, and one of the best trattorie in town, where you can eat out and try some of the most typical dishes of the famous Bolognese cuisine.

 

Prices include finding and booking accommodation, didactic materials, cultural activities and attendance certificate.
